1. Kjolle

Pía León, former head chef of Central (The World’s Best Restaurant 2023), opened Kjolle in 2018 to explore Peru’s vibrant pantry with creative freedom, focusing on flavour, colour and context. Named Peru’s Best Restaurant 2025 and winner of the 2025 Art of Hospitality Award, Kjolle preserves natural flavours through rigorous research, minimal manipulation and whole-ingredient use to reduce waste. The experience features visually striking dishes, ceramics and glassware curated with Peruvian artists, and a team led by León with pastry chef Anny Rodríguez. Its signature dish, “many tubers,” layers toasted olluco with an oca paste on a cañihua tart.

2. Mérito

Mérito blends Peruvian bounty with Venezuelan roots, crafting inventive, soulful dishes. On the tasting menu, you'll find dishes like the Andean curry; beef, arracacha (a starchy root vegetable) and mango; and cocona (an Andean fruit) with mashua (a local tuber) and lemon verbena. Expect playful textures, wood-fired flavors, and a cozy, minimalist space.

3. Cosme

After gaining valuable haute cuisine experience in kitchens around the world, chef James Berckemeyer returned to his native Peru to unveil his first establishment in 2015. Taking a relaxed approach to cooking, Cosme serves up a short but diverse menu, capturing the aromas and flavours of Peruvian home cooking, celebrating seasonality and Lima’s vibrant spirit.

4. Mayta

On its 10-year anniversary in 2018, Mayta moved to new premises with a revamped interior and totally redesigned menu. Since then, its star has been ascending, entering into Latin America's 50 Best Restaurants in 2019 and making its debut on The World's 50 Best Restaurants list in 2022. Chef Jaime Pesaque's refined Peruvian cuisine now draws diners from all over the world.
